JAPANESE KITCHEN KNIFE
Misuzu, Shimatani

This knife is made with a traditional process that has been passed down for generations in Ono and Miki City in Hyogo, Japan, the place that has the longest history of forging in Japan. The workshop there can make different types of knives for various uses; from extra-hard high-end knives for professionals to multi-purpose knives for home cooks. We focus on sharpness and usability of our knives, and make them one by one by hand to be used for a long time.
